以前出過油性紅豆沙菜譜,是做蛋黃酥、月餅專用的。后來在粽子菜譜里也有講過半油性紅豆沙的做法,半油性,其實更符合大眾口味,不油、不甜、不膩,細膩綿軟,口感更沙,更適合做驢打滾、青團、粽子、八寶飯、豆沙包、粘豆包、湯圓的內(nèi)餡。
跟油性紅豆沙相比,這個豆沙少油、少糖,沒有加麥芽糖,類似小時候經(jīng)常吃的紅豆餡兒。

用料

紅豆

500克

清水

1500克

玉米油

100克

細砂糖

100克

不油不甜膩紅豆沙(青團粽子豆包驢打滾)的做法

  1. 500克紅豆淘洗干凈

  1. 清水泡6小時以上,然后再次淘洗一下。加入1500克清水,高壓鍋豆類蹄筋功能煮50分鐘以上,直到能夠打開鍋蓋為止(或者電飯煲煮粥功能1.5小時)

  1. 煮好的豆子,把里面的豆水濾出去(不浪費原則,加糖喝掉即可)

  1. 用壓泥器把豆子初步搗爛(或者破壁機、攪拌機),這一步也可以省略,因為等下翻炒的時候也會爛

  1. 轉(zhuǎn)移到不粘鍋里

  1. 加入100克玉米油,中火翻炒至濃稠

  1. 加入100克白砂糖(這個量可調(diào)整,根據(jù)喜好自行把握即可)

  1. 中火翻炒到水分蒸發(fā)掉,整體潤而成團

  1. 炒豆沙全程大約5分鐘(我是用最大火,不停翻炒)

  1. 雖然看起來油潤,吃起來卻很清新,能吃出沙沙的口感。這個即便做蛋黃酥也是可以的(只是還有一定水分,蛋黃酥表皮可能會微皺,而且不耐放)
