我特別喜歡用蕓豆來(lái)做菜,尤其是在這個(gè)蕓豆最鮮嫩的季節(jié)。無(wú)論是炒著吃、燉湯,還是包餃子,蕓豆都能輕松勝任,給家常菜肴增添幾分不一樣的風(fēng)味。每年春天,我都會(huì)在市場(chǎng)上買上幾斤新鮮的蕓豆,用來(lái)做蕓豆牛肉餃子。蕓豆和牛肉的搭配堪稱絕妙,牛肉的香濃配上蕓豆的清甜,咬上一口,滿滿的幸福感油然而生。

蕓豆牛肉餃子的做法
材料:蕓豆:300克、牛肉餡:250克、蔥姜末:適量
步驟:
1、準(zhǔn)備蕓豆:將蕓豆洗凈,去除豆筋后切成小丁??梢詫⑶泻玫氖|豆焯水,焯水時(shí)間不宜過(guò)長(zhǎng),保持蕓豆的脆嫩口感。焯水后,迅速過(guò)涼水,這樣可以保持蕓豆的鮮綠色。
2、準(zhǔn)備牛肉餡:將牛肉餡放入大碗中,加入蔥姜末、料酒、生抽、老抽、蠔油、鹽和白胡椒粉。為了增加餃子餡的黏性和嫩滑口感,可以打入一個(gè)雞蛋,順著一個(gè)方向攪拌牛肉餡,使其充分吸收調(diào)料的味道。最后再加入適量的香油,攪拌均勻。

將蕓豆丁加入到牛肉餡中,輕輕攪拌均勻。注意不要用力過(guò)猛,以免破壞蕓豆的口感。包餃子:取一張餃子皮,放入適量的蕓豆牛肉餡,用手指蘸水沿著餃子皮的邊緣抹上一圈,然后將餃子皮對(duì)折,捏緊邊緣,確保餃子餡不會(huì)漏出來(lái)。依次包好所有的餃子。

在鍋中燒開一鍋水,加入少許鹽,這樣餃子不容易粘連。水開后下入餃子,用勺子輕輕推一推,避免餃子粘鍋。煮至餃子全部浮起,再加一次冷水,待餃子再次浮起時(shí),就可以撈出食用了。

將煮好的餃子撈出,瀝干水分后裝盤。可以搭配一些蒜泥、醋和辣椒油,蘸著吃更加美味。
小貼士:
- 蕓豆的處理:蕓豆焯水后迅速過(guò)涼可以保持它的脆嫩和鮮綠色,焯水時(shí)間不要過(guò)長(zhǎng),否則蕓豆會(huì)失去脆感。
- 牛肉餡的攪拌:在攪拌牛肉餡時(shí),要順著一個(gè)方向攪拌,這樣可以讓肉餡更有黏性,包出的餃子口感更加緊實(shí)。
- 餃子的煮法:煮餃子時(shí)加入少許鹽可以防止餃子粘連,水開后下餃子,等餃子浮起來(lái)再加一次冷水,這樣煮出來(lái)的餃子皮薄餡嫩。
