- 買來的蝦,去頭去尾去殼后,給蝦開背去蝦線。開背的蝦油炸的時(shí)候會(huì)卷起來,更像球。

- 在蝦中加入適量料酒、鹽、胡椒,再加入一個(gè)蛋黃,腌制15-20分鐘。
- 腌制蝦的時(shí)候準(zhǔn)備切一下芒果,切成方塊兒,邊角料可以吃掉,或者留著拌進(jìn)醬里;將洗凈的黃瓜用擦絲器擦成薄片,卷起來備用。

- 調(diào)醬汁:3袋沙拉醬,加入適量芥末(根據(jù)自己吃辣的程度),沒有芥末可以加蜂蜜芥末醬(試過,也挺好吃),再加入一些番茄醬調(diào)整一下顏色。
沙拉醬我用的一袋是30g,丘比或亨氏的香甜沙拉醬。 - 開始準(zhǔn)備炸蝦:熱鍋,同時(shí)準(zhǔn)備一些玉米淀粉,將蝦完全裹上淀粉。
鍋熱以后,放入鍋中油炸至略微金黃;油溫升高(一定要升高,不然浸油會(huì)很油膩)以后復(fù)炸半分鐘撈出;不想復(fù)炸可以一次炸到金黃。 - 蝦好的蝦撈出,將準(zhǔn)備的芒果拿出大部分,與蝦一起放入醬汁中攪拌,完全裹上醬汁。

蝦是很容易熟的,別炸過了變柴了;
醬汁不要調(diào)淡了,會(huì)讓菜變得遜色,既然吃油炸食物了也就不要計(jì)較熱量了??
