我們徽州的特色,也是我的招牌菜之一。這道菜的關(guān)鍵是肉和魚(yú)的比例,2:1或3:1,因?yàn)轸~(yú)是咸的,如果肉少了,即便你加了冰糖、沒(méi)放一點(diǎn)鹽、咸魚(yú)也泡過(guò)水了,最后也會(huì)很咸。

  1. 咸魚(yú)洗干凈(魚(yú)肚子里的黑色膜要洗掉)用溫水泡半小時(shí)以上,改刀小塊
