牛肉

干辣椒粉

孜然粉

200克

少許(平時做菜的5分之1的量)

蠔油

2勺

胡椒粉

少量(黑、白胡椒粉都可以)

  1. 先將牛肉洗凈,切成比牙簽稍短點(diǎn)的牛肉條,然后切幾片生姜。把牛肉放入大碗中,放入料酒抓幾下,然后放入生姜片、半勺蠔油、少許十三香腌制約半小時。

  1. 趁腌牛肉的時間準(zhǔn)備配料。大蒜、生姜切成碎沫,蔥切成小蔥花。

  1. 將牙簽洗干凈,把腌好的牛肉用牙串好。

  1. 冷鍋放油,待油溫升高后,將火調(diào)到中小火。把串好的牛肉分2-3次放到油鍋中炸,大約炸3分鐘左右,待看到牛肉炸到縮水到3分之2大小就可以撈出來。全部炸完成再一起倒鍋內(nèi)再炸1分鐘,這樣基本表面能炸到金黃色。
