卡仕達(dá)吐司最早見(jiàn)于《孟老師的100道面包》一書(shū),是一款非常經(jīng)典的軟式吐司。安安對(duì)原方進(jìn)行了一些改動(dòng),用牛奶替代了水,從而使面包口感更為松軟香甜。卡仕達(dá)吐司的爆發(fā)力非常好,因此更適合做成大個(gè)子山形吐司哦~

  1. 制作卡仕達(dá)湯種:蛋黃、牛奶、高筋面粉和細(xì)砂糖放入奶鍋混合攪勻至無(wú)面粉顆粒。

  1. 小火加熱,邊加熱邊攪拌,直到液體變成濃稠糊狀,密封好冷藏備用。

  1. 將全部卡仕達(dá)湯種(約98克)與除黃油外的其他面團(tuán)材料放入面包機(jī),啟動(dòng)揉面程序20分鐘,放入室溫下軟化的黃油,繼續(xù)揉面10分鐘至黃油被面團(tuán)完全吸收,面團(tuán)達(dá)到完全階段:能拉開(kāi)大片光滑且不易破的薄膜。

  1. 無(wú)須基礎(chǔ)發(fā)酵,直接分割成4份,分別整理成圓球形,密封松弛10分鐘。
