今兒個立夏,天兒明顯熱起來了,人也跟著沒精神,食欲都差了。老家老人常說“立夏吃4黃,不用醫(yī)生幫”,說的是4種帶“黃”字的家常菜,都是應季又實惠的食材,做起來簡單,吃完渾身得勁兒,尤其養(yǎng)脾胃、補氣血,夏天少生病。

一、黃甘蔗紅棗水

甘蔗咱都知道,咬一口甜津津、水汪汪的,夏天口干舌燥時來一杯,比喝冰水舒服多了!它能清熱潤肺,尤其是剛?cè)胂挠悬c上火、嗓子干疼的人,喝幾天就明顯好轉(zhuǎn)。

詳細做法:

1. 買甘蔗時讓老板切成小段(自己砍太費勁),回家用鋼絲球把外皮刷干凈,砍成3厘米長的小段(別太短,煮的時候容易散)。

2. 紅棗10顆左右,用剪刀把核去掉(帶核煮容易上火),記得用溫水泡5分鐘,把褶皺里的灰洗干凈。

3. 鍋里加1000毫升水(差不多4碗),先放甘蔗段,大火煮開后轉(zhuǎn)小火煮15分鐘,再放紅棗,接著煮10分鐘。關火后別急著喝,燜5分鐘更甜。

二、黃瓜炒蝦仁

黃瓜是夏天的“刮油菜”,水分多、纖維足,吃著清爽還能通便。天熱沒胃口時,來盤這菜,酸甜脆嫩,能多扒兩口飯。

2. 蝦仁200克,去掉蝦線(用牙簽在蝦背第二節(jié)挑出來),用廚房紙吸干水分,加1勺料酒、半勺鹽、1勺淀粉,抓勻腌3分鐘。

3. 鍋里放2勺油,油熱后放3瓣蒜末爆香,先下蝦仁炒到變色蜷起來(大概1分鐘),馬上盛出來。

4. 鍋里再補半勺油,下黃瓜片,辣椒,大火炒1分鐘,加半勺糖、半勺生抽調(diào)味,然后把蝦仁倒回去,翻炒均勻就出鍋。

三、黃豆芽燉肉

黃豆發(fā)芽后,營養(yǎng)翻倍!維生素C含量暴增,夏天容易口腔潰瘍、牙齦出血的人,多吃點準沒錯。而且豆芽里的纖維更軟乎,比黃豆好消化,特別適合脾胃弱的人。搭配五花肉一起燉,豆芽吸飽了肉香,五花肉也不膩了,妥妥的下飯神器。

詳細做法:

1. 黃豆芽200克,放水里洗兩遍,把豆皮搓掉(不然煮出來湯渾濁),瀝干水備用。

2. 五花肉300克,切成3厘米見方的塊(別切太小,燉完會縮水),冷水下鍋,加2片姜、1勺料酒,煮開后撇去浮沫,撈出肉塊用溫水洗干凈。

3. 加1勺生抽、半勺老抽、3片姜、2顆八角、1段桂皮,翻炒出香味,然后加開水沒過肉(一定加熱水,不然肉會柴),大火燒開后轉(zhuǎn)小火燉20分鐘。

4. 放入黃豆芽,加半勺鹽,接著燉15分鐘,直到豆芽和肉都軟爛,開大火收收汁,湯汁濃稠就關火。

四、黃豆燉排骨

立夏后陽氣上升,人容易累、沒勁兒,喝點骨頭湯能補氣血。黃豆和排骨簡直是“黃金搭檔”!黃豆里的鈣和排骨里的膠原蛋白結(jié)合,喝起來濃油赤醬的,補鈣又滋補,尤其適合老人小孩和剛生完孩子的女人。夏天空調(diào)房里待久了,喝一碗熱乎的湯,渾身都舒服。

詳細做法:

1. 黃豆100克,提前泡4個小時(泡發(fā)后燉起來容易爛),要是趕時間,用熱水泡1小時也行。

2. 排骨500克,剁成小塊,冷水下鍋,加2勺料酒、3片姜,煮開后撇凈血沫,撈出用溫水沖干凈。

3. 鍋里放1勺油,加蔥段、姜片、2顆花椒炒香,放入排骨翻炒2分鐘,加1勺生抽、半勺老抽,繼續(xù)炒到排骨上色。

4. 把泡好的黃豆連水一起倒進鍋里(水別倒太多,剛好沒過排骨就行),再加2顆蜜棗(增加甜味,不愛吃甜的可以不放),大火燒開后轉(zhuǎn)砂鍋(沒有砂鍋就用鐵鍋),小火燉1小時。

5. 燉到排骨能用筷子輕松扎透,加半勺鹽、少許白胡椒粉調(diào)味,再煮5分鐘,撒點蔥花就出鍋。
